Symington Saison

A few years back, local brewer Mark Verok asked us to host the launch of his new beer, a contemporary take on classic saison called Symington Saison. Mark was our neighbour and an active part of Toronto’s brewing scene, so we were glad to help and intrigued to try the beer. We loved it, and looked forward to seeing Mark and the Katalyst Brewing Company grow.

Fast forward to today and Mark has decided to take Katalyst north of the city, far from the namesake street and neighbourhood that launched this beer. We thought it a shame that such a tasty brew would be no more, and offered to take the brand on and, happily, Mark agreed. We hope you enjoy this refreshing, farmhouse style beer with notes of clove and citrus, and a slightly tart finish.

Tasting Notes

  • OG: 11.5 Plato
  • IBU: 25
  • SRM: 4
  • Malts: 2 Row Pale, Spelt, Pilsner, Acidulated
  • Hops: Magnum, East Kent Goldings, German Hallertau Blanc
  • Yeast: West Abbey Ale
  • Extras: Dextrose, White Peppercorn
  • Aroma: Pepper up front with light fruit undertones of banana, gooseberry, apple and some lemongrass. Also has notes of cloves and bubblegum.
  • Appearance: Deep, hazy straw. Lasting white head leaves lacing on glass.
  • Taste: Spice dominant with pepper up front with layers of apple, lemongrass, bubblegum and grass.
  • Mouthfeel: Medium body and medium-high carbonation. Prickly pepper feeling finishing dry with slight astringency.
  • Overall Impression: A light, peppery saison with notes of soft fruit that finishes dry.
